Tabasco Plant - Boudin & Cracklins Lafayette LA
Enjoyed the visit 700,000 bottles per day. Excellent store with variety products
Other specialty in area are "Boudin & Cracklins". When traveling HWY 10 exit #97 to Don's Specialty Meats and Grocery. It is along the #10 HWY next to Harley Davidson. Plenty parking to include RV's. The Cracklins are to die for and after eating them like pigs we almost died that night.
The Boudin
Cost: $2.69 lb
Presentation: Wrapped in butcher paper and placed in a brown paper bag at the register.
Casing: Moist, yet breakable.
Rice/Meat Ratio: Excellent. More meat than rice. Good meat without much grease.
Texture: The rice was well cooked and not broken into bits. It retained its form. Meat appeared in small pieces providing a good feel and some body. Bits of green onion throughout add to the color of the product.
Spices: A subtle mild spiciness. The heat from the red pepper grew after each bite but was never "hot."
Overall Taste: Darn good link of boudin. Excellent pork taste. Moist but not wet.
Comments: We recommend this spot without hesitation. They also offer a wide variety of other food products. The beef jerky was excellent and the cracklins are first rate.
Cracklins, or cracklings, are pieces of pork fat and skin which have been deep fried so that they turn crispy and golden. There are numerous preparation techniques for cracklins with slightly different end results, ranging from very heavy, greasy chunks of food to light, fluffy pork skins.
