Trailer Lafayette LA

So what is the concern here in Lafayette, the next Katrina ? high tide ? sewage back up ?

Tabasco Plant - Boudin & Cracklins Lafayette LA

Enjoyed the visit 700,000 bottles per day. Excellent store with variety products

Other specialty in area are "Boudin & Cracklins". When traveling HWY 10 exit #97 to Don's Specialty Meats and Grocery. It is along the #10 HWY next to Harley Davidson. Plenty parking to include RV's. The Cracklins are to die for and after eating them like pigs we almost died that night.

The Boudin
Cost: $2.69 lb
Presentation: Wrapped in butcher paper and placed in a brown paper bag at the register.
Casing: Moist, yet breakable.
Rice/Meat Ratio: Excellent. More meat than rice. Good meat without much grease.
Texture: The rice was well cooked and not broken into bits. It retained its form. Meat appeared in small pieces providing a good feel and some body. Bits of green onion throughout add to the color of the product.
Spices: A subtle mild spiciness. The heat from the red pepper grew after each bite but was never "hot."
Overall Taste: Darn good link of boudin. Excellent pork taste. Moist but not wet.
Comments: We recommend this spot without hesitation. They also offer a wide variety of other food products. The beef jerky was excellent and the cracklins are first rate.

Cracklins, or cracklings, are pieces of pork fat and skin which have been deep fried so that they turn crispy and golden. There are numerous preparation techniques for cracklins with slightly different end results, ranging from very heavy, greasy chunks of food to light, fluffy pork skins.

New Orleans Bourbon Street Musicians

We first visited this area some 10 years ago. Entertainment has changed but still excellent musicians to see and hear

City Tour New Orleans

We took a city tour, visited several devastated housing areas to include re building by Brad Pitt, Oprah etc. The Catholic cemetary is one of the two stops we got out. This was my highlite, very intersting history

Having just eaten at Swamp John's, we were due for a treat with table cloths and wine. Great meal.

We are following Jim & Betty Watson's on Natchez Trail from Red Bay Alabama

Swamp John's Red Bay Alabama

It is rumoured that Swamp John's serves the best Catfish in all of Alabama.

Lucette attempting to taste her fisrt ever plate of Catfish.

Jim Watson 60th Birthday

We certainly wanted to do something special for Jim's b-day, however being in Red Bay dry county the options are limited. Swamp John's has a reputation and all other options are 50 miles away. Therefore I believe that eating out at Swamp John's was a very different approach, one that we shall remember for quite some time.

Betty & Lucette

Don't they look cute, picture taken before they received their Catfish plate.

Nashville TN

We joined the Watson's here for couple days. Hit downtown entertainement and the highlite was certainly the street bars. Of course some would say that my vehicle was impounded for the night but ??? what more can I say at least it was not me.

Departed Home for Winter Trip Mexico
